The pigs raised for Noto pork undergo strict hygiene management in Ishikawa, and are slaughtered at the Ishikawa Prefecture Kanazawa Meat Distribution Center. The meat is rated by the Japan Meat Grading Association. In 2006, Ishikawa Prefecture Livestock Research Center, Hokuriku Gakuin University and Nisshin OilliO Group, Ltd. jointly developed a type of pork called “Blessing of α”. It contains five times more α-linolenic acid, which is effective in preventing lifestyle-related diseases, than ordinary pork. Thirteen pig farmers in Ishikawa shipped 44,000 pigs in 2014, most of which were consumed in the prefecture. The Noto Pork Promotion Association was established in 2014.
