Sea cucumbers (stichopodidae haeckel) caught here are an echinoderm with an elastic body and a thick skin mainly made of collagen. They grow to a length of 30cm, and the body color is red, blue or black. They have a mouth at the front, and an anus at the back. They feed on diatom, seaweed and plankton contained in the sand at the ocean bottom, and excrete sand after taking in nutrition. The peak season of sea cucumber fishing is from December through February. They are caught with dredging nets. They can be eaten raw with vinegar, the gut can be pickled, and the ovary can be dried and eaten as a delicacy. Dried sea cucumber is also becoming popular as an ingredient in Chinese food.
