Noto satisfies the three indispensable conditions for a sake brewery, that is, the right rice, the right water and the right technique. Noto is blessed with a local rice brand perfect for sake brewing called Gohyakumangoku, clear spring water and brewers whose expertise is ranked in the top four in Japan. Sake from Noto is rich and sweet and goes well with local cuisine. There are 15 breweries in four cities and three towns of Noto, all of them popular among local people. In recent years, in addition to general sake, ginjo and daiginjo, which are higher quality sake made by polishing rice more, have been produced and have attracted attention from sake lovers outside Ishikawa.
